Saturday Baking

On a Saturday I will often  to make the effect to fill the tins for lunches and treats for the week. It is quite often the only time during the week I get free to do this. One of my family's favourite recipes is a lemon cake. It is very easy to make and will not last long in the tins.

The Lemon Cake

4 oz butter

6 oz sugar

Cream together, add two eggs and beat well.

Sift together 6 oz flour, 1 tsp baking powder.

Mix into creamed egg and butter mixture, stir in 4 tablespoons of milk and 1 tablespoon of lemon zest, fold in lightly.

Place in lined loaf tin and place into a cold oven and cook for 30 minutes or until cooked at 370 degrees.

Icing

2 oz icing sugar and lemon juice mix together and spread over cake when it comes out of the oven.

This recipe is such an old one it is still in imperial measurements not the metric measurements we use here in New Zealand today.
